Spotlight: Amylase

The digestion of carbohydrates into sugar is one of the most important processes in nature. Amylase enzymes play a central role in fragmenting carbohydrates into oligosaccharides and sugars to help unlock energy. At S&T we have developed a high performance Amylase which has excellent starch processing properties across a wide range of industrial and commercial conditions. Our Amylase is food grade and is available at 100 mL and 1L scales (email us for larger quantities). Widespread applications include: brewing and baking, starch / food processing, detergents and biofuels.

Amylase is typically added in brewing and baking products to increase sweetness by unlocking sugars. In detergents this enzyme helps breakdown carbohydrate-based stains. For biofuels Amylase can help maximise the product yields.
