The digestion of carbohydrates into sugar is one of the most important processes in nature. Amylase is typically added in brewing and baking products to increase sweetness by unlocking sugars. In detergents this enzyme helps breakdown carbohydrate-based stains. For biofuels Amylase can help maximise the product yields.
