Spotlight: Glucoamylase

Producing simple sugars from oligosaccharides is an important process across nature and industry. Glucoamylase enzymes play a central role in maximising sugar yields by fragmenting oligosaccharides into glucose or sucrose. At S&T we have developed a high performance glucoamylase which has excellent processing properties across a wide range of industrial and commercial conditions. Our glucoamylase is food grade and is available at 100 mL and 1L scales (email us for larger quantities). Widespread applications include: brewing and baking, starch / food processing and biofuels.

Glucoamylase is typically added in brewing and baking products to increase sweetness by unlocking sugars. For biofuels glucoamylase can help maximise the product yields.
