Endo-mannanase cleaves appropriate beta-1,4 mannosidic linkages in mannans and related polymers. Substitution and accessibility influence the response. Do not infer that the same preparation will reduce the viscosity of every gum, including polymers with different backbones.

Distinguish unwanted residue from useful functionality

In cleaning or process recovery, breaking down a gum residue may be desirable. In a beverage or sauce, the same change could remove intended body or suspension stability. Define the target viscosity window and any structural properties that must be retained.

Check the process pH
