Match enzyme to flour structure

Xylanase acts on susceptible xylans and arabinoxylans, but accessibility and effect differ among flours. A high-fibre or wholegrain formulation may behave differently from a white loaf at the same nominal dose.

Measure the flour's baseline absorption and keep hydration fixed for the first comparison. An additional water-adjusted trial can then test whether altered water distribution has practical value.

Avoid a single-metric decision

Run independent doughs at two or more supplier-supported doses. Compare mixing tolerance, machinability, proof height and baked specific volume.

A larger loaf may still be too sticky to process or have an undesirable crumb. Record loaf symmetry, crumb cell structure, slicing and sensory quality.

Assess blends after individual effects

Amylase, lipase and glucose oxidase can also change loaf quality. Test xylanase alone before adding it to an improver blend; then use a controlled comparison to identify an interaction.
