β-Amylase

Direct starch conversion towards maltose.

Develop maltose-rich hydrolysates for brewing and cereal processing by combining chain-end cleavage with suitable liquefaction and debranching.

01 / Understand the chemistry

How does β-amylase work?

β-Amylase removes successive maltose units from non-reducing chain ends. Branch points restrict progress and leave limit dextrins. It is not an alternative name for β-glucosidase and does not hydrolyse cellulose.

Expose chain ends

Liquefaction can create more accessible ends in starch.

03 / Methods & measurement

How to measure β-amylase activity

Follow maltose release with an appropriate sugar assay or HPLC. A general reducing-sugar method cannot by itself distinguish maltose from glucose and other reducing sugars.

Make a better selection

What matters when choosing a grade?

Do not extrapolate thermal behaviour from α-amylase to β-amylase. A heating step that helps starch accessibility may inactivate the chosen β-amylase.

Confirm source, grade, activity method, formulation, storage and compatibility. Use stability data for the selected preparation; an optimum measured for one protein does not define every product’s operating window.

From screening to production

Plan a useful β-amylase trial

Set a matched control

Use your actual material. Keep pH, temperature, residence time and mixing identical in the untreated control, so physical processing effects are separated from enzyme action.

Screen dose and time

Compare a dose ladder and take a time course. State activity units and their assay definition, and express dose against a clear feedstock or process basis.

Validate the endpoint

Measure maltose, dextrins and fermentation outcome. Assess retained activity, downstream quality and cost per useful outcome before increasing scale.

β-Amylase: common selection questions

What does β-amylase produce?

β-Amylase removes successive maltose units from non-reducing chain ends. Branch points restrict progress and leave limit dextrins. It is not an alternative name for β-glucosidase and does not hydrolyse cellulose.

How do I test β-amylase for my process?

Follow maltose release with an appropriate sugar assay or HPLC. A general reducing-sugar method cannot by itself distinguish maltose from glucose and other reducing sugars.

What should I check before buying β-amylase?

Do not extrapolate thermal behaviour from α-amylase to β-amylase. A heating step that helps starch accessibility may inactivate the chosen β-amylase. Share your feedstock, operating conditions, target outcome and required documentation when requesting a grade recommendation.
