OatCraft Liquefy HT: A liquid high-temperature alpha-amylase formulation for oat milk starch liquefaction. Use it to reduce the viscosity of a gelatinised oat base before sweetness development and downstream processing.
Application benefits
- Target internal alpha-1,4 starch linkages to form shorter dextrins.
- Evaluate viscosity reduction and improved handling of your oat base.
- Select the high-temperature route to match your heating sequence.

Process screening
Measure viscosity, residual starch and process handling after gelatinisation. Confirm the suitable operating temperature and pH for the supplied formulation; HT is a process-route identifier, not a universal temperature specification.
How to evaluate
- Provide your oat material, solids content, complete formulation, process sequence and target beverage properties.
- Compare untreated controls with enzyme doses and treatment times at your intended pH and temperature.
- Measure the relevant process and beverage properties, then validate enzyme inactivation before packaging and confirm finished-product stability.
